Mampazha Pulisseri ( Ripened Mango+ Curd+ Coconut ) Onam Special from Jes's Kitchen ! RECIPE #313




Step 1:-  Grind Coconut ( 1/2 - 3/4   cup   )  , and cumin seeds  ( 3/4 - 1 teaspoon) into  a smooth paste . And keep aside .





Step 2:- Cut Ripened Mango ( one big , into small squares) 




and cook them by adding  turmeric powder( 1 teaspoon )  , kashmiri chilli powder ( 1/2 teaspoon ) ,  jaggery ( a lemon sized / 1/4 cup ) , green chillies ( 2-3 nos ),   salt  




 and water ( 1/2  -1  cup ) ,   on medium flame ( until the mango pieces become  soft  ) 


mash it  ( as in the pic below )  .


Step 3:- Now add  the Step 1 coconut  - cumin seeds mixture . Combine and add water ( 1/2 cup ) and boil it . Then allow to cool it .





Now add curd ( 1/2 - 3/4 cup )  and combine at the same time .



Step 4:- Heat another  pan and add  oil  (  2 teaspoons   ) and  splutter mustard seeds ( 2 teaspoons ) ,  and add curry leaves ( 2 twigs )  ,  red dried chillies ( 4-5 nos )  .. 



Step 5:-  Pour "step 4 oil-  curry leaves - red chillies " 


over the "step 3  mango mixture  ". Combine  and add salt ( if needed ) .

Cucumber - Pachidi ( cucumber +Coconut + Curd+mustard seeds +Coconut oil ) Onam Special from Jes's Kitchen ! RECIPE #312



Step 1:- Cut Cucumber( one long Or 1 cup , into small squares) and cook them by adding water ( 1/2 cup )  and salt ,   on medium flame ( until it gets soft  as in the  4th pic below ) 


Step 2:-  Grind Coconut ( 1/4- 1/2   cups   )  , green chilli  ( 2 nos ) ,mustard  seeds  ( 1  1/2 teaspoons) and cumin seeds  ( 1 teaspoon) into  a smooth paste . And keep aside .


Step 3:- Now add  the Step 2 coconut  - mustard seeds mixture , combine , 



and add water ( 1/4 cup ).    And boil it  .  And then allow to cool  it .


Now add curd ( 1/2 cup )  and combine at the same time .



Step 4:- Heat another  pan and add  oil  (  2 teaspoons   ) and  splutter mustard seeds ( 2 teaspoons ) ,  and add curry leaves ( 2 twigs )  ,  red dried chillies ( 4-5 nos )  .. 



Step 5:-  Pour "step 4 oil-  curry leaves - red chillies " over the "step 3  mixture ", 



Combine  and add salt ( if needed ) .



Step 7 :-   Cucumber - Pachidi ( cucumber +Coconut + Curd+mustard seeds +Coconut oil )  Onam Special  from Jes's Kitchen is  ready .......: -) ..... Enjoy  :) J A  Mathew . 




Aviyal ( a mixture of Vegetables+Coconut + Curd+Coconut oil ) , Onam Special from Jes's Kitchen ! RECIPE #311





Step 1:-  Coarse grind Coconut (   I used frozen  , grated coconut , 340 gms  ~  1 1/4  cups   )  , green chilli  ( 5-6 nos )  and cumin seeds  ( 1 teaspoon) and keep aside .




Step 2:- Cut Vegetables lengthwise ,as in the 4th pic . The  vegetable that i used are [ Raw Plantain  ( 1 nos ) , Carrot  ( 3 nos ,  medium sized ) ,   long Beans ( 10-15 nos )  , Tindora ( 7-8 nos ) , Taroroot  ( 4 small )  , Cucumber  ( one ) , Snake Gourd  ( one ) , Egg plant/ Bringal ( 2 nos, long type  ) , Ash Gourd ( 1/4 of a medium sized )   and Caribbean Squash  ( one )] . And set aside  . I DIDN"T GET DRUMSTICK THIS TIME :( 


Step 3:- Heat a pan and add coconut oil  (  2 table spoons   ) and  splutter mustard seeds ( 2 teaspoons ) , 




Now add   Step 2  raw plantain   , carrot  ,   long beans  tindora ,  and taroroot   , saute for 2-3 minutes and 


now  add  remaining  step 2  vegs,  snake Gourd   , egg plant/ bringal  , Ash Gourd  and caribbean Squash   . And add turmeric powder( 1 1/2 teaspoons )  , kashmiri chilli powder ( 1 teaspoon ) , salt  water ( 1/4 cup ) and curry leaves ( 2-3 twigs ) 

And cook for 20 minutes on medium flame



Step 4:- Now add Step 1 coconut mixture , combine , and cook for another 3-4 minutes on medium flame



Step 5:- Now add curd   (  1 cup , medium  sour ) , combine and cook for another 2-3 minutes .




Step 6:- Now  add coconut oil  (  2 table spoons   ) , 


combine and switch off the flame :) 



Step 7 :-  Aviyal ( a mixture of Vegetables+Coconut + Curd+Coconut oil )  from Jes's Kitchen is ready .......: -) ..... Enjoy  with steamed rice :) J A  Mathew .

" Jes Special " Mashed Sweet Potato For Beginners ! RECIPE #310






Step 1:- Boil  or microwave sweet potato ( 3  , medium sized )   , and keep aside .


Step 2:- Heat a pan and add ghee (  1-1 1/2 tea spoons  ) and 



 add garlic  ( finely chopped , 2 1/2  teaspoons )  , 


 cumin seeds ( 1/2 teaspoon )   ,  saute until the garlic becomes golden brown in color .





now  add step 1  sweet potato ,  mash it , 



now add spring onion   (    chopped , 1/2 cup  ),    cilantro   ( chopped  , 1/2 cup ) and pepper powder    ( 1 teaspoon  ) , salt and combine , 



 and add ghee   ( 2-3 teaspoons  ) , and combine !!!



Step 3 :-  " Jes Special " Mashed Sweet Potato !  is ready .......: -) ..... Enjoy :) J A  Mathew .

"Jes Special", Beef Korma ( Kerala Style ) ! RECIPE #307

Step 1:- Wash ,  and clean  "  beef "( 3 lb~ 1 1/2  kg ) and set aside .


Step 2:- Heat a pan and add oil ( any vegetable oil, 1-1 1/2 table spoon  ) , saute    garlic  ( chopped   , 5-8 cloves   ginger ( chopped  , 4'' of a root  ) ,  and  onion    ( chopped , 3 large , red onions  ) ,   until onions become transparent , 




now   add coriander seeds  ( 2 teaspoons  ) ,cardamom ( 4-5 nos  ) , peppercorns  (2 teaspoons )  , cloves ( 5-6 nos  ) , fennel seeds ( 1 1/2   teaspoons)   , cumin seeds ( 1/2  teaspoon)  , cinnamon sticks  ( 2,  small )  and  anistar  ( one petal ) ,  saute for 2-3 minutes , 




and add cashews  ( 3/4 cup) , green chillies  ( 3-4 , nos   ) , turmeric powder   (1 1/2  teaspoons )  , saute for  1-2 minutes and ,






 add water ( 1/2 cup ) and cook for 4-5 minutes , 


and allow to cool and grind it into a smooth paste and set aside .



 Step 3:-  Now add  step 1 beef  ,  to the same pan and  saute  ( until beef pieces'e color changes to pale , 



as in the pic below ) and add tomato  ( chopped , 2 medium sized tomatoes ) , curry leaves ( 2 -3 twigs)   and  green chillies ( 3-4 , as whole ) , 



and saute for 3-5 minutes, 


 now add the step 2 paste ,



 combine and add water ( 2 cups )  and salt .



Now transfer it into a pressure cooker OR Instant  Pot , and cook   ( Instant pot -  Manuel , 20 minutes on high ) . KINDLY READ INSTANT POT'S  USER  MANUEL BEFORE  ITS OPERATION !!


Now open its lid ( by using NPR )  and change its setting to 'SAUTE' mode


and add coconut milk (  1 cup thick  OR 1/2 cup coconut milk powder ) , 




  cilantro ( 3/4 cup , chopped )  , and pepper powder ( 1 1/2 teaspoons ) , 




and cook for another 5-6 minutes (by  just placing a lid over it ) . ENJOY !!! :) 



Step 4 :- "Jes Special",  Beef Korma ( Kerala Style )  is ready .......: -) it goes well with   with  steamed rice/ Chapathi/ paratha/Tortilla/Bread  ..... Enjoy :) J A  Mathew .
