Special Egg Moilee RECIPE#75


 Special Egg Moilee 







Step 1:-Boil 5-7 cups of water with 3-4 teaspoon of salt ,  add  7-10 Eggs and allow it  to boil in a low flame for 5- 7 minutes. Remove the shells from the boiled eggs and keep aside.



Step 2:-  Slice  3- 4 medium sized onion,  Chop  3 '' of  ginger  root & 4-6 garlic cloves, chop 1- 1 1/2  tomato ,prepare 2 cups of thin coconut milk and 1 cup of thick thick coconut milk  and keep aside.


Step 3:- Heat 1 tablespoon of vegetable oil  in a pan . Splutter 2 teaspoon of  mustard seeds,   add 1 teaspoon of fennel seeds2-5 pieces of cinnamon sticks, 2-3 cardamom and  2-5  cloves  .Saute for few minutes.



Step 4:- Add 3- 4   onions , 3-4  splitted green chilies , 5 ''  ginger root  ,4-6  Garlic cloves  and few curry leaves ( Step 2).  


 Step 5:- And  saute until the onion turns golden brown in color.



                                   Step 6:- Add salt  and 1 1/2 chopped tomato . Saute for few seconds.




Step 7:- Make  smooth paste with ''Step 6 Contents'' .


Step 8:-   Saute the Step 7 paste in a pan for few minutes .Add Bring down the heat  and add 2 teaspoon of turmeric powder , 1 1/2 teaspoon of garam masala  (  How to prepare garam masala powder :- http://jesacos5.blogspot.com/2013/11/biriyani-powder-garam-masala-powder.html )  and 1- 1 1/2 teaspoon of coriander powder. Saute for few more seconds.


Step 9:- Add 2 cups of thin coconut milk. Cook for 10- 15 minutes  on  medium flame .



Step 10:- Add eggs ( Step 1)   , cook for an another 8-10 minutes on medium flame .



Step 11:- Now bring down the falme  and  add 1 cup of thick coconut milk  and 1 - 1 1/2  teaspoon of crushed pepper powder mix well and cook for 5-7 minutes on low flame . Add some chopped cilantro.



Step 9 :-  :) :) Serve hot with ''Vellayappam/ Kallappam/ Palappam'', Chapaties......

Moru Curry with Coconut RECIPE#74

Step 1:-  Blend  one liter of the curd  in a mixer and keep it aside .

 Step 2:- Make a fine paste with 2-3  ginger roots ,   11/2  teaspoon of cumin seeds , 1  cup of grated  coconut , and  3-4 green chilies.



Step 3:-  Mix ''Step 2 mixture''  with Step 1 Curd  and keep aside 


Step 4:-  Heat 2 table spoon of  vegetable oil in a pan. Splutter  2 teaspoon of mustards seeds ,  add 1/4 finely chopped onion and 2-4 garlic cloves. Saute for few minutes.


Step 5:-  Add few curry leaves, and saute until the onion becomes golden brown in color.


Step 6:-  Bring down the heat and add 2 - 3 teaspoon of turmeric powder, 1/2 teaspoon of Kashmiri chilli powder, 1 teaspoon of Fenugreek  powder , a pinch of Asafoetida powder, and add 1/4 cup of water. Allow to boil.


Step 7:-  Bring down the heat  and add the curd- coconut mixture.


Step 8:- Mix well


 Step 9:- ''Keep'' in low flame for another 7- 10 minutes 




Step 10:-  Serve with hot steam rice...........:)

Varutharacha Kadala Curry ( Kottayam Style ) RECIPE#73







 Step 1:-  Soak a cup of KADALA for 8- 10 hours/ over night 




Step 2:- Drain water from the KADALA . 



Step 3:- Microwave the soaked KADALA  with 1/2 teaspoon of turmeric powder salt and  1/2-1 cup of water for 12- 15 minutes . And keep aside.


Step 4:-  Heat a pan , add 1/2 - 1cup of grated coconut .Saute for few minutes 



Step 5:- Add 2-3 cinnamon sticks , 2 cardamom . 5-6 black pepper and 2 teaspoon of fennel seeds . Continuously saute until the grated coconut becomes brown in color.





Step 6-Bring down the heat and add 1 1/2 teaspoon of kashmiri chillipowder,2 teaspoon of coriander powder and 1/4 teaspoon of turmeric powder .Saute for few seconds.



Step 7:- Add a chopped tomato , mix well .Remove from flame and allow to cool


Step 8:-  Grind into a smooth paste, and keep aside.



Step 9:- Heat 2 tablespoon of vegetable oil  in a pan . Splutter 2 teaspoon of  mustard seeds,    2-4 dried red chillies and  1/4 cup of  coconut pieces ( thenga kothu)   .Saute until the coconut pieces becomes brown in color..


 Step 10 :- ''At this point'' add   add '' sliced 3/4 of a big onion  , 4-6 garlic cloves, 3 inch of ginger root and a pinch of asafoetida. Saute  until the onion becomes transparent .


Step 11:- ''At this stage''   bring down the flame and add  step 8 paste and mix well with 1/2 cup of water. 


Step 12:- Add step 3 ''microwaved KADALA'' and mix well.




Step 13:- Add 1- 2 cup of water , 4-10 curry leaves ,  1 teaspoon of garam masala powder(  How to prepare garam masala powder :-  ( http://jesacos5.blogspot.com/2013/11/biriyani-powder-garam-masala-powder.html )  salt and cook for 30- 45 minutes on medium-high flame . For spicy curry add  1/2 more  teaspoon of pepper powder and 1/2 teaspoon of kasmiri chiili powder ''at this stage ''




Step 14:- Varutharacha Kadala Curry ready . Its a best side dish for Dosa, Chapattis, steamed rice ...........:) :) Enjoy  JA- Mathew-

Urad Dal Dosa RECIPE#72








Step 1 :-  Soak  2 cups of urad dal , 2 teaspoon of fenugreek seeds for 5-8 hours



Step 2:- Drain the  water from the urad dal .


Step 3:- Grind  well  with 1/2- 3/4 cup of water. Keep it for 2-8 hours to ''ferment ''


Step 4:- Just before making the dosa, add salt and mix it well . 
Heat a  pan ( dosa thava), wipe  the pan with  oil , pour 1 ½ spoon of batter in the center and spread it properly ''in a circular way'' ( as in the picture )  with the spoon to get  a very thin dosa . 


Step 5:And after a minute '' sprinkle''  2 teaspoon of ghee . 


Step 6:-Flip the dosa to other side ,cook the dosa from both side until it gets a golden brown color.


Step 7:- Serve hot with chutneys/ kadala curry/fish curry . :) ......- JA-Mathew-
