Steak Fajitas in Italian style RECIPE#143

Step 1:-  Cut  1 1/2  lb  of steak   into  'thin long strips' . 



                            Step 2:Make a smooth paste with  2-3 green chillies ,   1/4 cup of chopped cilantro , 1/2 cup of chopped spring onion , 4-5 garlic  cloves ,  2 teaspoon of olive oil , lemon juice from half of a lemon .



                      Step 3:Marinate   the  Step 1 pieces with  Step 2 Paste , 1 teaspoon of cumin powder, 1/2 a teaspoon of  chilli powder  ( I used  kashmiri  chiili powder )  and  salt  for 2- 7 hours.





                       Step 4:-   Julienne  a carrot , a green pepper, a red pepper , 2-4 asparagus , 2-3 celery  and a onion . And keep aside .

S                              Step 5:-  Heat  a pan on stovetop and then add  1 teaspoon of vegetable oil ( canola )  and then heat the oil.  

S                              Step 6:Now add the' Step 4 vegetables' ,  sprinkle  1/2 teaspoon of pepper powder and salt . And  continuously saute for 7-8 minutes on high flame , 


until  the vegetables become soft  and onion becomes transparent  as in the picture below . And keep aside .



Step 7:Now add the  marinated steak pieces ( step 3 ) . Cook for 2- 3 minutes on high flame .


Step 8:-   When the steak gets done,  add the  'Step 6   sautéed vegetables ' . 


Combine well  with  1-2 teaspoon of lemon juice .



 Step 9:- Steak Fajitas ( Italian style ) is ready........ enjoy with fulkas/tortillas/chapattis ...............:) JA- Mathew-

Egg-Potato Masala RECIPE#142









Step 1:-   Chop a large  potato and microwave with  1/2 -1 cup of water   for 9-10 minutes . keep aside.


Step 2:- Heat   a wide pan ,   heat  2 table spoon of vegetable oil and  saute  a  large   onion ( sliced ).



3-4 garlic cloves , 2'' ginger root , until the onion gets  transparent .


Step 3:-  Now add 2-3 cardamom , 3-5 cloves, and 2-3 small pieces of cinnamon sticks . saute for 2-3 minutes on medium flame.


Step 4:- Bring down the heat and add 2 teaspoon of coriander powder, 1/2 teaspoon of fennel seed powder, 1 teaspoon of turmeric powder and 1 1/2 teaspoon of  kashmiri chilli powder .



Step 5:-  Add  1 teaspoon of pepper powder 1 cup of water and 6-12 curry leaves  and ''cook ''for  20 minutes on medium flame.


Step 6:-  Now add 4-7 boiled eggs .



and  'microwaved 'potato ( step 1) 


Step 7:  'Combine' well and '' cook for another 15 minutes on low flame .


                      Step 8:- Egg-Potato Masala  is ready enjoy with fulkas, tortillas, chapattis , steamed  rice  :) JA- Mathew-

Hand tossed super thin crust wheat Pizza RECIPE#141




Step 1:-Prepare   the  Pizza dough .

                     I -    Mix 1 teaspoon of sugar  in  1/2 cup of Luke warm water  and  add 3/4  teaspoon  of yeast , 1/2 table spoon of salt  and sugar  keep aside to' rise' .




                   II - Make 'a paste with the  raised yeast'   and  1/2 cup of  Atta / wheat flour  . Keep aside. 

                   III - Combine 2 1/2 cups of atta /wheat flour  and  2 1/2 teaspoon of olive oil  well , and add the  'mix II', and 1/2 cup of water , knead well until  you get a soft, springy dough.

                   IV-  Cover the ''dough'' with a warm damp cloth.  And keep  in  warm place ( preferably 78 degree Fahrenheit)   for 1  1/2 hour ( until the dough doubles its size  ) .

                  V-  Knead  again and ''keep it '' for another 1/2 more  hour.
             




Step 2 :- Preheat the  Oven to 450 degree Fahrenheit .
Step 3:- Spread the Pizza dough on  a pre greased pizza pan ( 14.25" round ) .Press the dough [ 1/4 '' thickness]  into the pan . Make  enough holes along the surface of the dough with a fork. Brush the top  and edges 'of the dough' with olive oil. Keep aside  for 10 - 15 minutes.






Step 4:-   Spread   Pizza sauce  in even layer  over the dough.  Place the toppings (  ,mushroom onion, carrots, spring onion......)  ,




'Cooked' chicken pieces ,


  shredded  Parmesan cheese.


 and pepperoni  evenly over the 'dough'.


Step 5:- Bake for  10- 14 minutes [ in middle rack ] until the the crust is  golden brown in color .


Step 6 :- Pizza is  ready....................

Paneer-Veg Soup RECIPE#140









Step 1:- Heat a  pan and add 1 table spoon of butter .



Step 2:-  Add   2 cloves of  garlic and 2'' of ginger root (chopped).  Saute for few minutes .


Step 3:-  Add  1/2 of a medium sized onion ( chopped ). Saute until it becomes transparent .


Step 4:-  Now add chopped [ 1/2 of a medium sized tomato , 2-3 medium sized carrots, 3-4 celery  and 2-3 spring onion ]. Saute for few minutes.

Step 5:-   Add 3 -6 cups of water


1 teaspoon of thyme , salt , 2 pinch of garam masala ,


1 cup of chopped italian parsley,   3-4 asparagus (finely chopped),  a  teaspoon of pepper powder. And cook until the vegetables are ''well done''  .


Step 6:-  Now add  2 cups of chicken broth ( chicken stock , soy sauce, pepper powder) , and boil for another 4-5 minutes.


Step 7:-  Now add  2 cups of cubed paneer. Cook  on  low- medium flame  for  5-6 minutes  . ''Until the paneer in done ''


Step 8:-  Paneer-Veg Soup  is ready .....serve hot.....:) :) JA-Mathew-

Cauliflower ( Gopi) Manchurian RECIPE#139

Step 1:-   'Make a paste '  with 1/2  cup of corn flour , 1/4 cup of bread flour , 1/4 cup of maida, 1 teaspoon of turmeric powder, 1 1/2 teaspoon of kashmiri chiili powder,  1 teaspoon of pepper powder, salt and  1/4 -1/2 cup of water .   




Step 2:-  'Coat' the  florets of cauliflower ( 1/2 of a cauliflower ) with   'Step 2 paste'  and 'keep it ' for  1 hour.


Step 3:-  Heat a pan and then heat 1 cups of vegetable oil , ' shallow fry'   or  'bake'  the 'marinated' florets  , until it gets a golden brown in clolor.




Step 4:-  Drain the extra oil on a paper towel.


Step 5:In another pan ,  add 1 table spoon of vegetable oil , saute   4-5 sliced garlic cloves and 3''  of sliced ginger root  and 2-3 chopped green chillies , until the ginger garlic gets brown in color.


Step 6:Add   1 1/2 onion ( cube cut )  and saute until the onion gets transparent.



Step 7: Now add a green pepper ( cube cut ) ,


2 table spoon of soy sauce ,


Add 4-5 table spoon of  red chilli sauce ,  


5-6 table spoon of tomato sauce / tomato ketchup , 


1 teaspoon of vinegar, 1/4 teaspoon of hot chilli sauce , salt  and  combine well.


Step 8:Add 3-4 chopped  spring onion.


Step 9:-Combine well and 'cook' for 10 minutes on low medium flame /heat 


Step 10 :-  Now add the fried florets  ( step 4) ,



Step 11 :-   Combine well .And 'cook' for another 2- 5 minutes .



Step 12 :-    Sprinkle 1 teaspoon of pepper powder.


Step 13:- Cauliflower (Gopi)  Manchurian ( Indo- Chinese Style)   is ready............Enjoy ...JA- Mathew-
