Jes' style " Spicy& Stuffed Steamed Cake " with Idly Batter RECIPE#264









Step 1 :- Prepare Idly batter and set aside  . 


Step 2 :- Heat oil and splutter mustard seed and cumin seeds  .

Step 3 :- Saute  onion ( 1 cup , finely chopped  )  ,  garlic ( 1 teaspoon ,  finely chopped ) , ginger  ( 1 table spoon , finely chopped ) , and green chillies ( 3-4 finely chopped ) .




and add mushroom ( 1/2 cup . finely chopped ) once the onion becomes transparent , and saute until the mushroom becomes soft  .



Now bring down the temperature   and add kashmiri chilli powder ( 1/2    teaspoons ) , turmeric powder ( 1/2   teaspoon )  and coriander powder ( 1/2 teaspoons )  saute until its raw smell goes away !, and


Now add mixed vegs  ( I used frozen one  ) , combine and cook for 3-4 minutes on medium flame . and set aside . 


Step  4  :-  Boil  water ( 1-2 cups ) in a big pan , and place a steaming  rack


Place a 8 " round pan or any round steel plate  , grease it with oil



Pour idly batter  ( 2- 3 cups )  , close the lid and steam it for 4-5 minutes .




Now open the lid and  place the step 3 mixture   ,  evenly on  top of the the 'batter '  ( as in the picture below )  . 




And 'cover it 'again with   idly batter 1-2 cups ) evenly on the top of the mixture  (as in the pic below ) ,  and steam it for 20 -30 minutes 



on medium flame ( until a tooth pick inserted into center of the steamed cake  comes out clean  ).



allow it to cool for 5-6 minutes .

Easy 'Jes special Black rice' Recipe RECIPE#263







'Jes special Black rice' &  Pininyahang Manok ( pineapple Chicken ) 




Step 1 :- Wash and rinse black  rice ( 1 cup )  


until water runs clear from the rice . 




add  water2 1/2 cups ) and salt . And cook for 25-30 minutes  on medium flame , until water is absorbed and rice is  fluffy and keep aside .


Step 2:- Saute  onion ( 1/2 cup , finely chopped  )  ,  garlic ( 1 teaspoon ,  finely chopped ) , 



 green chilli ( one , chopped ) , until the onions becomes transparent .


now add  carrot  ( 1 cup ) , saute for 1-2 minutes and 



add  peppers ( yellow, red and orange 1/2 cup each  ) and salt , and saute for another 1-2 minutes  and 


 add dried cranberries ( 1/4 cup )  and raisins ( 1/4 cup ) ,  saute for another 2-3 minutes 


now add the 'step 1 cooked black rice' . Combine well and cook for 2-3 minutes on low flame .

Easter Special Vanilla & Cocoa Marble Cake / ' Zebra Cake ' from Jes' Kitchen !!! RECIPE#262









 Step 1 :-  Pre-Heat  the oven to 350 degree Fahrenheit ~176.6 degree celsius .


 Step 2  :-    Grease and flour an ovenproof 9 inch round pan  and set aside .


Step 3 :-    'Beat'   butter (  1 sticks /8 tablespoons , melted  )  and sugar ( 2 cups ~ 236.5 ml  ) , for 2-3 minutes on high seed , 


 and add eggs ( 4 nos ) , salt ( 2 pinches ) , milk (  low fat or  2 % milk , 3/4 cup) and vegetable oil ( 2 table spoons) , 


'beat' it until it becomes creamy ( 3-4  minutes, on high speed  )  and keep aside . 



Step 4 :-    Sift  whole purpose flour ( 2 cups )  and baking soda  ( 1 1/2 teaspoons)  and keep aside 





Step 5  :-   Combine Step 3 and Step 4  . 

Step 6 :-    Divide the Step 5 batter  into equal  halves and add  dark 100% cocoa powder  ( 2 table spoons , I used Hershey's, unsweetened  )  to one half , and 


vanila ( 3 teaspoons ) to other half .


Pour  vanila batter(1/2 cup ) into the center of the prepared step 2   pan  ,then  pour cocoa  batter (1/2 cup ) into the center of vanila batter ( as in the pic below ) , repeat this until both batter 'get finished' ! 




Step 7 :-   Bake it for 35-40 minutes ( until a tooth pick inserted into center of the cake comes out clean  ).

Easter Special Ginger Fish Masala RECIPE#261








Step 1:- Marinate fish ( 2 lbs , i used tilapia )  with kashmiri  chilli powder ( 1/2  teaspoon) , lemon juice ( 2 teaspoons ) ,  fennel powder ( 1/2 teaspoon)  ginger garlic paste ( 1/2  teaspoon),  and salt   for  20 to 30 minutes .


Step 2 :-  Shallow fry them    ( 4 1/2  minutes on each sides on medium flame  ) ,  







and drain them on a  paper towel and keep aside .




Step 3:- Make a  "smooth batter'  with corn flour  ( 1/2 cup ) , tomato ketchup ( 2 table spoons  ) , dried ginger  powder ( 1 table spoon )  , kashmiri  chilli powder ( 3/4 teaspoon) , lemon juice/ rice vinegar  ( 2 teaspoons ) ,  palm sugar  ( 5 table spoon), soy sauce ( 3 teaspoon ) , Salt ,



  and   water ( 1/4 cup ), and keep aside .



Step 4 :- Saute  ginger ( 1/4 cup , julienned )  and garlic ( 2 teaspoon , chopped ) , until its raw smell goes away !! and add 



onion ( sliced , a big one, saute it for 4-5  minutes  ) 


now add bell-peppers ( red , orange and yellow - 1/2 cup each )  , 



now add the "step 3 paste "


and now add "step 1 fish " , combine well and cook for 15 minutes on low flame.



Step 5 :- Now add green onions (a bunch ), combine and cook for another 2 minutes .



Step 6 :-   Ginger Fish Masala is ready ..... Enjoy  with    Steamed rice/ Neer Dosas/  chapattis/ fulkas/Tortillas    ........JA-Mathew- :)
