Jes Special Spicy Thalapakattu Chicken Biryani ! RECIPE #298






Step 1:- Grind garlic  ( 15-18  nos, OR 1 1/2 cloves  )  , mint leaves  ( 1/2 cup  ) ,   pearl onions  ( 10--15 nos)  , green chillies  ( 4-6 nos  ) , ginger  ( 3'' piece of a root )  , coriander leaves  ( 1/2 cup  )  , and set aside 


Step 2:- Combine coconut milk powder ( 5 table spoons )  and cashew paste ( 4 table spoons )  and set  aside  .



Step 3:- Grind cardamom ( 9-10 nos )  , fennel seeds ( 1 table spoon ) ,   peppercorns ( 20-25 nos)  , anistar ( 2-3 petals ) , cloves ( 7-8 nos )  , cinnamon sticks ( 2-3nos  , small )  , and set aside 



Step 4:- Grind  tomato  (  2,  medium sized   ) and set aside .



Step 5:- Wash , clean  and cut boneless chicken thighs ( 2 1/2 lbs ~ 1 1/4 kg )  ,  marinate it with turmeric powder ( 1/2 teaspoon )  and kashmiri chilli powder ( 3/4  teaspoon ) and lemon juice  ( 2 tablespoons )  for 20- 60 minuets and set  aside .



Step 6:- Wash and soak  rice ( basmati  rice 2 1/2 cups )  and  keep aside.

Step 7:- Heat a pan and add ghee ( 2-3  table spoon  ), 


add onion   (  red ,  3 big nos ,  sliced  ) and  saute  (  until onions becomes  transparent and light brown onion color )  .



now add   Step 1 paste  



now add step 3 powder , turmeric powder  ( 1 1/2 teaspoons) ,  and Kashmiri chili powder ( 2 teaspoons )  , combine and 



now add   Step 4 tomato  paste  , and combine , 




now add   Step 5  Chicken  , and saute , 



and add  water ( 1/4 cup)  and salt ,  cook ( until chicken pieces are 75% done )  .




now add   Step 2 paste  , COMBINE , 



now add  step 6  rice  ,  



 add water (  3 1/4  cups , hot water ) 




combine and cook ( until the rice is well done )

Jes Special Easy Chicken Teriyaki RECIPE #297






Step 1:- Wash , clean  and cut boneless chicken thighs ( 2 1/2 lbs ~ 1 1/4 kg )  into small 2'' cube sized pieces , and 




 marinate it with  lemon juice  ( 2 tablespoons )  for 20- 30 minuets and keep aside .




Step 2:-    In a Mixing bowl , combine soya sauce ( 1/2 cup  ) , rice vinegar ( 2 table spoons)  , sesame oil  (  1 1/2 table spoons) , mirin (  2-3 table spoons ) . 



 garlic  ( grated , 2 table spoons)  ,  ginger   (   grated , 2 table spoons) , brown sugar  (  3 table spoons )  and salt  , and set aside . 



Step 3:- Heat a pan and add oil (  olive oil  OR any vegetable oil, 2-3 table spoons  ), 



 spread  the step 1 chicken pieces,    and  cook 




until its color changes to a  pale white color as in the pic below , make a well in the middle  and  and  remove the chicken juices ( if its too much ) , 



cook / fry it until chicken pieces  gets brown color  on its surfaces  ( it will take total of 15-20 minutes  )




Step 4 :-  Now add "step 2 sauce "  and  combine , 



and add   spring onion  ( chopped 1/4 cup  )   , 



black  pepper  powder   ( OPTIONAL ,  1 teaspoons ) ,  salt  ( check for the salt and add If needed ) and  add 



step 3 chicken juice  and  cornflour ( 1 teaspoon )  , combine and cook for  another 10-15 minutes on medium flame 



until the " sauce  "become thick ( as in the pic below )  .

Mini Fried Cake / Cut Cake / Vettu Cake RECIPE #296







Step 1:- In a mixing bowl , combine    egg ( 2nos  ) ,  sugar( 3/4 cup )  and milk ( luke warm , 1/4 cup)  well and 




beat it  for 5-7 minutes ( on medium speed )  ,



now add  whole purpose flour ( maida , 2 cup and 2 table spoons , baking soda  ( 1/2  teaspoon ) , baking powder ( 1/2 teaspoon )  , salt ( a pinch ) , 



vanilla essence ( 3/4 teaspoon )  , COMBINE , and 


knead it into a smooth ball as in the pic below  , and 



cover it with a damp paper towel , allow to rest for minimum 60 minutes .


after 60 minutes , the dough will look so smooth as in the picture below <3. Now divide the dough into  3 small balls , and 



spread the 'balls ' ( minimum 1/2 '' thickness ) ,  as in the picture below 



 now cut them ( with a knife or a pizza cutter ) into small squares ( 1 inch sized cubes )  , and make an 'X'  mark , with a sharp knife on each squares ( as in the picture below )  .



Step 2:-  Heat a pan and add oil ( vegetable , 2 cups ) and  heat  the oil and fry the "squares ", 


( until its both sides get golden brown in color , as in the picture below ) 


 drain them on a paper towel.



Step 3 :-    Mini Fried Cake / Cut Cake / Vettu Cake  is ready .......: -) enjoy .....J A Mathew :) 


Jes Special , Kerala Style Mashed Carrot And Potato RECIPE #295





Step 1:- Boil  carrot   ( 9-10  medium sized  ) , potato  ( 2 nos  , large ) and sweet potato ( 1 , medium sized )   , 



mash  them , 






and set aside . 



Step 2:- Heat a pan and add oil ( any vegetable oil, 1-1 1/2 table spoons  ) and  splutter mustard seeds (1 teaspoon )  ,  add cumin seeds ( 1/2 teaspoon )   ,  black pepper corns ( 9-12 nos ) , 



now add onion   (   finely chopped ,1 big red  ~ 1 1/2 cup  ), add   garlic  ( chopped  , 2-3 table spoons   ginger ( chopped , a big pieces  of a root , OR chopped  2-3 table spoons  ) ,  and green chillies   ( finely chopped , 4-5  nos ) , 



saute (  until onions becomes  transparent and light brown onion color ) , now add curry leaves ( finely chopped , 2-3 twigs )  , saute and , 


now  add step 1 mashed carrot- potato - sweet potato , COMBINE , 


 and add pepper powder( 1 1/2 teaspoons ) and salt  , 



and COMBINE . 



Step 3:- Jes Special , Kerala Style Mashed Carrot  And Potato  is ready .......: -) it goes well with   with  steamed rice/ Chapathi/ paratha/Tortilla ..... Enjoy :) J A  Mathew .
