Jes Special , Thakkali & Parippu /Tomato & Yellow Lentil Curry (Yellow Lentil +Tomato +Coconut ) Onam Special from Jes's Kitchen ! RECIPE #316





Step 1:- Soak   Parippu / yellow lentils   ( 1 cup ,  2-4 hours ) and cook  it by adding  green chillies ( 4-5 nos)  , garlic ( 6-8 cloves )  and salt .





( instant pot -18 minutes on high /  Microwave- 12 minutes on high / Pressure cooker 3-4 whistles )  .





Then allow to cool it and grind them in to a smooth paste and set aside . .





Step 2:-  Grind Coconut ( 1/2 - 3/4   cup   )  , and cumin seeds  ( 3/4 - 1 teaspoon) into  a smooth paste . And keep aside .







Step 3:-  Chop onion (  finely , one medium sized /3/4-1   cup   )  , and garlic   (finely 3-4 cloves   )  . And keep aside .





Step 4:-  Chop tomato  (  as in the pic below ,  2 medium sized  )  . And keep aside .


Step 5:- Heat a pan and add  oil  ( any vegetable oil ,  2 -3  teaspoons   ) and  splutter mustard seeds ( 2 teaspoons ) ,   and add   red dried chillies ( 4-5 nos )  .



and  now add  step 3 onion and garlic  and saute until the onion become golden brown in color and now add curry leaves ( 2 twigs ) , 




and  BRING DOWN THE FLAME AND ADD   turmeric powder( 1  1/4 teaspoons )  , kashmiri chilli powder ( 1/2 teaspoon ) 




Now add the tomato , and cook for 4-5 minutes on medium flame . 

Step 6:- Now add  the step 1 and step 2 paste , combine and add salt and  water ( 1/2 -3/4 cup )  and boil it .

Olan (Ash Gourd + Red / Black eyed beans Coconut milk/ Coconut milk powder ) Onam Special from Jes's Kitchen ! RECIPE #315





Step 1:- Cut Soak  red / back eyed beans  ( 2-4 hours ) and cook and keep aside .

Step 2- Cut ash gourd  ( 1/2 of a big one  , into small squares)  and cook them  by adding    green chillies  ( 4-5 nos )  water  ( 1/2 cup ) and salt( as needed )   ( until 



 the pieces of ash gourd become transparent as in the pic below ) 



Step 3- Now add the step 1 cooked beans , and cook for another 5 minutes . 


now add    coconut milk ( 1 cup thick  OR 3/4 cup coconut milk powder in 1/2 cup water ) , combine and  allow to boil it .




Now add coconut oil ( 2 table spoons )  . switch off the flame and add salt and  curry laves ( 2 twigs )

Jes Special , Mixed Veg Thoran ( Ripened Plantain+Green Beans + Carrot+Tindora+Taro root + Coconut ) Onam Special from Jes's Kitchen ! RECIPE #314



Step 1:- Chop Vegetables  ,as in the pic below  . The  vegetable that i used are [ Raw Plantain  ( 1 nos ) , Carrot  ( 2 nos ,  medium sized ) ,   long Beans ( 5-7  nos )  , Tindora ( 7-8 nos ) , Taroroot  ( 2nos,  small ) ] . And set aside  .




Step 3:- Heat a pan and add  oil  (  1 table spoon   ) and  splutter mustard seeds ( 2 teaspoons ) ,  and  cumin seeds  seeds ( 1 teaspoons ) ,   and add  dried red chillies  ( 3-4 nos ) , 


and add  onion   (  finely chopped , one big red    )  garlic  ( 4-5 cloves , chopped  ) ,  and  greenchillies  ( 2-3 nos , chopped ) ,. Saute until onion becomes transparent .





Now add   Step 1 Vegs    saute for 1-2  minutes and 



 add turmeric powder( 1 1/2  teaspoons )  , kashmiri chilli powder ( 3/4  teaspoon ) , salt  , grated coconut  ( 1 cup  ) and curry leaves ( 2-3 twigs ) , 




Combine and add water ( 1/4 cup ) 



 And Cook for 20 minutes on medium flame  .



 Now open the lid  and cook for another 4-8 minutes ( until the water has completely evaporated from the thoran )

Mampazha Pulisseri ( Ripened Mango+ Curd+ Coconut ) Onam Special from Jes's Kitchen ! RECIPE #313




Step 1:-  Grind Coconut ( 1/2 - 3/4   cup   )  , and cumin seeds  ( 3/4 - 1 teaspoon) into  a smooth paste . And keep aside .





Step 2:- Cut Ripened Mango ( one big , into small squares) 




and cook them by adding  turmeric powder( 1 teaspoon )  , kashmiri chilli powder ( 1/2 teaspoon ) ,  jaggery ( a lemon sized / 1/4 cup ) , green chillies ( 2-3 nos ),   salt  




 and water ( 1/2  -1  cup ) ,   on medium flame ( until the mango pieces become  soft  ) 


mash it  ( as in the pic below )  .


Step 3:- Now add  the Step 1 coconut  - cumin seeds mixture . Combine and add water ( 1/2 cup ) and boil it . Then allow to cool it .





Now add curd ( 1/2 - 3/4 cup )  and combine at the same time .



Step 4:- Heat another  pan and add  oil  (  2 teaspoons   ) and  splutter mustard seeds ( 2 teaspoons ) ,  and add curry leaves ( 2 twigs )  ,  red dried chillies ( 4-5 nos )  .. 



Step 5:-  Pour "step 4 oil-  curry leaves - red chillies " 


over the "step 3  mango mixture  ". Combine  and add salt ( if needed ) .

Cucumber - Pachidi ( cucumber +Coconut + Curd+mustard seeds +Coconut oil ) Onam Special from Jes's Kitchen ! RECIPE #312



Step 1:- Cut Cucumber( one long Or 1 cup , into small squares) and cook them by adding water ( 1/2 cup )  and salt ,   on medium flame ( until it gets soft  as in the  4th pic below ) 


Step 2:-  Grind Coconut ( 1/4- 1/2   cups   )  , green chilli  ( 2 nos ) ,mustard  seeds  ( 1  1/2 teaspoons) and cumin seeds  ( 1 teaspoon) into  a smooth paste . And keep aside .


Step 3:- Now add  the Step 2 coconut  - mustard seeds mixture , combine , 



and add water ( 1/4 cup ).    And boil it  .  And then allow to cool  it .


Now add curd ( 1/2 cup )  and combine at the same time .



Step 4:- Heat another  pan and add  oil  (  2 teaspoons   ) and  splutter mustard seeds ( 2 teaspoons ) ,  and add curry leaves ( 2 twigs )  ,  red dried chillies ( 4-5 nos )  .. 



Step 5:-  Pour "step 4 oil-  curry leaves - red chillies " over the "step 3  mixture ", 



Combine  and add salt ( if needed ) .



Step 7 :-   Cucumber - Pachidi ( cucumber +Coconut + Curd+mustard seeds +Coconut oil )  Onam Special  from Jes's Kitchen is  ready .......: -) ..... Enjoy  :) J A  Mathew .
